Brooks's story

My name is Brooks. I’m the husband and chef behind Bloom Cheese Collective, a multi-faceted cheese and specialty shop opening this coming summer of 2025 in Fayetteville, Arkansas. When I met my wife Ali, our love for food drew us together. Ali spent 12+ years working specifically in cheese, earning her Certified Cheese Professional certification in 2013. After taking some time to focus on our family and 4 daughters, we’re excited to finally be sharing what we love with Fayetteville through Bloom. I have over two decades of culinary experience that was fueled by attending culinary school at the CIA, then working at multiple Michelin star restaurants in a variety of cuisines as well as the kind of places that lack a cuisine but have their own style. I have a passion for food anthropology and building a good larder through pickling and fermentation. While the heart of Bloom lies within the cheese case, there are several other concepts planned under its umbrella. There will be a small unique menu featuring a combination of sandwiches, salads, and specials that highlight our whimsy of the moment. In addition, we have a series of more formal dinners and informal pop ups planned. While our desire is that cheese will bring you through the door, we hope you stay for the food, and come back for the ambiance. We will have monthly cheese and pairing classes and cheese-focused dinners, but you’ll want to keep your ears out for the pop-up dinners bound by no rules.
