A loan helped an LGBTQ Chicana owned allergy-cognizant party catering company establish a brick and mortar location.

Sam's story

I have always wanted to have a restaurant since I was little. I knew early on that food can have so many emotional connections, and incredible responses to core memories related to meals. My plans for a business evolved over my lifetime from a 24-hour brunch diner to a Moroccan breakfast cafe, and many more.

Unfortunately, my dreams were not supported by my Chef father who thought kitchens were too rough. I went to beauty college instead of a culinary education. I was inspired as an artist either way and devoted over a decade to developing colors and styles, including stage work for the haircare brand Paul Mitchell. I started by own business Sophisticated Styles by Sam. I loved the colors I could create on the canvas of someone's hair!

When I turned 30, I decided it was up to me to make a change if I was ever going to share my food with the world. I loved to create beautiful salads with seasonal produce with fresh herbs showcasing the colors of nature. Cooking was another level of making art for me. It was thrilling.

I made a 10-year plan and got to work. I wrote a cover letter letting hiring managers know I had nearly 20 years F&B experience with my father's catering business. I have memories of making hundreds of pancakes at 4 am when I was 8. I couldn't eat pancakes again for another 3 years! I was hired to work brunch during Football season at an Irish Pub in Seattle. I had two egg pans and over a hundred seats. I learned very quickly this was not going to be easy.

I began working two jobs, one doing prep in the mornings learning breads, pastry, soups, and sauces, and in the evening, I worked pantry at a well-established woman owned restaurant. I became a sous chef in 5 years and moved to the front of house. After another 5 years I had become Food and Beverage Director, and felt it was time to launch my own business and set up my daughter and I's future.

I have a party catering company called Pickles Farm Food. I specialize in dietary restricted food. I have invested a lot of time in creating the beginning phase of my dream. I knew I needed a base that investors could see who I was and what my business stood for. By being able to participate in courses provided by the Lucero Consulting and receive guidance from the Maricopa Small Business Association, I have developed the tools to jumpstart my business.
