Toussaint's story

I am Toussaint, born and raised in Hayti. I am the founder of pHresKoo Owl Citrus Beverages & Tea, and my three-year-old son is my business partner. I have been a long-time member of my community, and I am passionate about serving others in that community. As a Messiah University Alumni, it is in our blood. This is why I wrote a book entitled SuperHeroes of Service: An Immigrant’s Story, about eight years ago, as an effort to promote community service and as a means of creating long-lasting habits and relationships. I anticipate having a mobile library on the truck that will enable both adults and children to learn about historical African leaders, nutrition education, gardening tips, and more productive topics. As we grow, we will require staff for the truck at farmers' markets, pop-ups, special events, and community engagement projects. When we are ready to hire, we will certainly inquire from within our community and create opportunities for youth, including paid summer internships, externships, and volunteering opportunities.

I want to provide some Haytian healthy vegan options of Quiches and exotic Island Juices, that I still enjoy, made just the way they were when I was growing up in Hayti, and share these with the American audience. We are living in a culture where healthy food costs an organ, not a limb anymore. I am a firm believer that cooks in the home, the Chefs of our communities, are our first Doctors.
