Charlene's story

Growing up in Queens, NY, I created a makeshift cookbook by cutting out recipes from the dining sections in various newspapers and magazines. Since I was 11-years-old, I would wake up early on Saturday mornings just to bake in the kitchen. Mostly breads, cream puffs, baked pancakes (I always burn them in a frying pan), apple cake, etc. This still has not changed to this day.

I was raised in a strict Haitian household where little girls were supposed to learn the art of domestication; to manage a household of (future) children and a husband. I remember pouting with my arms crossed and a scowl on my face as my grandmother taught me how to cook at the age of 10-years old. What is the difference between my routine experimental cooking and cultural domesticated cooking? There was no creative thinking involved. Though I pouted the entire time, I learned from both of my grandmothers and absorbed everything they taught me.

When practicing my Haitian cuisine skills, I always experimented with different ingredients, processes and techniques; techniques that are not normally used in the culture. Why? Because everything, even deep-rooted cultural foods, must evolve.

Experimenting with the widely known Haitian cream liqueur, cremas, the recipe produced something I never dreamt of. A product that satisfies the needs of the younger generation while blending in with the American culture.

The cookbook I created in my youth has become the catalyst that has inspired me to launch my own business, which focuses on creative solutions and simple packaging, while still enhancing the taste of an original food product. My future goal is to build the foundation that will empower other culinary revolutionaries to do the same. When those individuals see what I’ve achieved, they’ll have the hunger to do the same.
