Beginning Of My Life and Culinary Journey
*Short Biography*

It all started in a small Spaniard town called Alcalde located in Northern New Mexico. I began working at the age of fifteen at a small place called Chamisa Inn, where I was inspired and greatly influenced by Chef Ruby Gallegos, who was a motivating force in my pursuit to becoming a professional chef.

Another source of inspiration was my grandmother whose homemade cooking instilled a sense of curiosity in me about the many culinary customs and practices that always seemed to translate into mouthwatering dishes. I vividly remember grandma’s steam filled kitchen and the sweet scent of spices, meats and fresh vegetables that carried a warm and natural sense of Welcome to anyone who entered our home. This was not merely cooking, this was a way of life for my family that has been passed on from generation to generation.

It is with great pride and joy that I share with you, my friends and growing list of clients, the wonderful and varied tastes of my rich culinary culture.

My life growing up in Northern New Mexico was organic and sustainable. I woke up every day in a house of love, compassion and teachings. All year long we where always working on the ranch, but of course education came first.

We had vegetable gardens,fruit trees and plenty of lambs,chickens, few cows and riding horses.

I have many stories to share with you.Many people now a days are amazed on some of the stories i have shared with them. My father would always tell me "First work -Then Pleasure"

**My dreams in life *Working smart with a quality of life, and to bring the visions I see as I sleep at night and meditate to become reality.

The last project that I worked on was a major accomplishment. The building that my team and I weree working on in 2011 was a complete shell.

I drafted all the Bistro and Kitchen floor plans and worked side by side with the architect on the new layout design. All drawings passed with county and city inspection. We received approvals for all building permits to complete project. :-)

60 seats and tapas bar *Bistro Project was finished in 7 months.
