In 2000, she decided to set up her own stand to sell gorditas (small, thick, corn flour tortillas), and her daughters started to help her prepare the stews and serve the customers in their spare time.

Irene inició el negocio cuando se divorcio, los ingresos familiares disminuyeron, y tuvo que buscar la forma de solventar los gastos de la casa y de sus 3 hijos, comenzó en 1997, trabajando como empleada familiar en un negocio de comida de un familiar. En el 2000, se decidió a poner su puesto de gorditas y sus hijas empezaron a trabajar y en su horario libre le ayudan con los guisos y en atención a clientes.
