Rosa Cristina's story

Señora Rosa Cristina lives in the city of Managua in Nicaragua. She is married and she has a section in the Managua market. For her past 27 years her main occupation has been the sale of vigoron – a typical Nicaraguan dish. Doña Rosa tells us about the production of vigaron – the chicharon is made from pigskin, it is fried in the same fat as the skin, the yuca is cooked until it is soft and the it is finished off with a cabbage, tomato, vinegar and carrot salad.

This delicious dish is served on a bamboo plate or a banana leaf.
It is worth mentioning that the plates are handmade in the city of Masaya.

Señora Cristina begins her working day at 8.00 in the morning. She sells vigoron in the mornings, as by midday she has already finished up with the vigoron sales and for this reason she also sells jewelry to her customers. Therefore, the products that she sells are always traditional of our country.
