In addition to selling cassava, Esi cooks and sells banku, a local dish made from corn dough, in Elmina. She serves her banku with soup, stew or a pepper sauce with fish.
Esi is single and has three children. She uses her income to provide for her children. She will use her loan to buy cassava and maize for the preparation of her banku. She hopes to use the new profits from her business to start a restaurant.
