A loan helped a women, minority-owned business build a new permanent store inside the downtown North Market.

Allyson's story

I have been baking since the ripe old age of about 10. It all started when I was about 6 years old when I watched my grandmother make a pound cake from scratch. I was both amazed and befuddled at the transformation of those raw ingredients into that delicious cake. I continued to help my grandmother any chance I could and when I was old enough, I begged my parents for an easy-bake oven. I outgrew that tiny little oven and started using a real oven within a month. I used to bake mini cakes and desserts and take them to school to sell to classmates and even teachers. I had the privilege to participate in the culinary arts program at the northwest career center while in high school where I was first introduced to a commercial kitchen. I fell in love! I attended Sullivan university after graduation and obtained a degree in culinary arts. While in culinary school, I learned the science behind baking and the formulas to achieve an excellent product and I have been a mad scientist ever since.

After I was finished with culinary school, I worked for many years in the restaurant industry. I was a sous chef at river valley country club, pastry chef at romano’s macaroni grill, and head baker at holiday inn to name a few. Once I started my family, I realized how unforgiving the restaurant industry can be and it became increasingly difficult to juggle a young family, husband, and culinary career. While my children were younger, I began working as a manager in a few restaurants to gain more managerial experience, I later made the move to retail management. I am grateful for all my past experiences because they have equipped me with the knowledge of how to operate a food service establishment and a retail business successfully.
