Ruth is 25 years old, single and makes a living selling cooked rice, yam and fufu. Fufu is prepared from cassava and plantain, which are pounded together, cooked, and then eaten with different kinds of soup. It is a very popular traditional food among the Ashanti tribe of Ghana, and can be breakfast, lunch or supper. Ruth has applied for a loan to buy more raw materials, such as bags of maize, meat, fish, vegetables and firewood. She hopes to raise her income and expand her business.
