Zakeiyeh's story

Zakeiyeh, aged 33, married to a supermarket worker, with four children, wishes to set up a home bakery business in her part of Jerusalem, Jabel Mukaber. She has an agreement to rent a space neighbouring her house from a relative in which to set up her bakery, and needs to purchase the equipment: a kneading machine, an oven, a mixer, a fridge, etc. She will also need to decorate. Zakeiyeh has no formal training in baking, but pursued it merely as a hobby till a while ago. At that point an acquaintance who runs a cafeteria in a neighbouring school, knowing the quality of her baking, contracted with her to provide a specific number of pastries daily. That encouraged Zakeiyeh to aspire to setting up her own bakery in a dedicated but still homely space. She will specialise in pizza, sambuska, zaatar and other savoury baked goodies, while her sister will help with the cakes and sweets. Her chosen location is well suited to attracting casual purchasers, as she is close to two schools and there is no direct competition, and she will also be able to supply the canteens of the schools to give her a regular income.
