Leo's story

Po' Boy Place has been a dream for many years. It started as an idea after moving to Texas from New Orleans, Louisiana when it became difficult to find the food that we grew up on. After evacuating Hurricane Katrina in 2005, it became evident that something was missing. The NOLA culture (music and food) was a huge part of our lives. After a couple of years, friends assured me that if I opened a New Orleans-influenced restaurant they would come often. My wife Jenee, and I decided to focus on our favorite NOLA style foods and Po' Boys continued to be our go-to favorite. So, we decided that it was only right to open a Po’ Boy Place that featured the best New Orleans Style sandwiches and sides! My wife and I would brainstorm daily coming up with different Po' Boys and trying to figure out a name. The conversation would always start with "What should we call the Po' Boy Place?". We contemplated for months until one day, Jenee came up with the idea that we just call the restaurant, "Po' Boy Place". From that day forward, we knew we wanted to be the brand for Primo Sandwiches (Po' Boys). We knew for this to be a success I would have to find a mentor with a similar dream. I got an opportunity to work for an amazing leader and concept that I helped build from the ground up. After 5 years of learning and growing, it was time to start the Po' Boy Place. After a year of operating our food truck, we signed our first lease for a restaurant in Waco, Texas which was where my family evacuated after Hurricane Katrina! Po' Boy Place #1 began in the spring of 2020 during the COVID-19 pandemic.
