Nicole's story

I went to culinary school at the age of 37 years old pregnant with my forth child and my oldest daughter going away to college! I had always wanted to become a chef since the age of 19 years old but instead I choose another career in the medical field, however, I never gave up on my dream of being a professional chef. I grew up in Oakland, California and spent my summer vacations and winter breaks on a 200 acre of farm land in Louisiana with my Grandmother, Great-grandmother, Great-Auntie and all their friends and family this impacted my childhood upbringing and I learned first-hand how to cook and bake. I was taught how to make breads, cakes, pies, cookies and pasta all homemade from scratch, and I learned about how to serve food and hospitality from working on my grandmother's farm filled with people purchasing fresh produce on a daily. Today, in my bakery we try to make everything from scratch, I love baking while the down town city air filled with sweet smells, people walk through the bakery just to catch a whiff of fresh bake goods. My dreams of the future are for La Dolce Vita Bakery and Cafe is to be full service in breakfast and lunch. I would like to expand the bakery to make birthday and wedding cakes one day and offer pastries to other restaurants and caterers for their customers. My entrepreneurial spirit is because of my grandmother whom was self-employed and took out her time to teach me first-hand experience of working for yourself.
