Valdrie's story

I started fishing when I was 7 or 8. My uncle taught me — he was a big time sportsman. All of my uncles and all of my cousins on both sides of the family hunt and fish. I'm a sportsman by blood. I hunt small game, including rabbits, raccoons, squirrels. I like to think I've got the best of both worlds: living in the city and the country. I'm a survivor, period. I'm also a chef by trade. It comes naturally because I'm also from a family of chefs. I love it. My favorite part is seeing customers’ empty plates coming across the counter. I want to see my customers not only buy my food, but also clean their plate and lick their fingers. I know I did my job when my customers are licking their fingers. I opened a barbecue place in Dallas years ago. The restaurant opened my eyes to the food industry. Eventually, I decided to return to New Orleans and discovered the seafood industry. Preparing and cooking food is my passion, and there is no better place to be than in New Orleans!
