A loan helped an immigrant-owned business purchase new kitchen and storage equipment to streamline food preparation.
I started cooking when I was 12 years old with my mother, Jacoba, in Mexico City. She shared all her recipes and taught me how to improvise with the food that we had in the refrigerator and the spices in our cabinet. At the age of 15, my mother became ill with leukemia and the responsibility fell on me to cook for the family. My father worked all day earning an income for our family. At the age of 24, I immigrated to the United States and started working at restaurants. I graduated through all the roles in the kitchen, from dishwasher to line chef. We keep a strong family dynamic in the restaurant today. My brother joined me in the restaurant and does a little bit of everything! My wife and daughter also help out for big events that we are catering or on our busiest nights. I hope to continue to provide for my family and pass down the techniques I've learned from previous generations.
