Rosa Cristina
Señora Rosa Cristina lives in the city of Managua in Nicaragua. She is married and she has a section in the Managua market. For her past 27 years her main occupation has been the sale of vigoron – a typical Nicaraguan dish. Doña Rosa tells us about the production of vigaron – the chicharon is made from pigskin, it is fried in the same fat as the skin, the yuca is cooked until it is soft and the it is finished off with a cabbage, tomato, vinegar and carrot salad.

This delicious dish is served on a bamboo plate or a banana leaf.
It is worth mentioning that the plates are handmade in the city of Masaya.

Señora Cristina begins her working day at 8.00 in the morning. She sells vigoron in the mornings, as by midday she has already finished up with the vigoron sales and for this reason she also sells jewelry to her customers. Therefore, the products that she sells are always traditional of our country.

La señora Rosa Cristina vive en la ciudad de Managua Nicaragua, es casada, propietaria de un tramo en un mercado de Managua desde hace 27 años su principal actividad es la venta de vigoron comida típica de Nicaragua, doña Rosa Cristina nos explica la elaboración del vigoron el chicharon se hace de el cuero del cerdo, se sofríe en la misma manteca que trae el cuero, la yuca se pone a coser hasta estar suave, y el toque final es la elaboración de ensaladas de repollo, tomate, vinagre, zanahoria.

Este delicioso platillo se sirve en bandeja elaborada de bambú, o en hoja de chagüite
Cabe mencionar que las bandejas son elaboradas por artesanos en la ciudad de Masaya.

La señora Rosa cristina empieza su jornada de trabajo desde las 8:00 de la mañana la venta de vigoron es por las mañana ya que a las 12 del mediodía ya ha terminado su venta de vigoron es por esta razón que también oferta bisutería a sus cliente. Así siempre esta ofertando lo típico de nuestro país.
