A l'obtention de son certificat de pâtisserie, il commence avec le peu d'argent une petite unité de production de madeleines, des croissants, des brioches, des pains au chocolat qu'il livre tous les matins dans les boutiques de son secteur, et a aussi créé de coins de ventes ou des jeunes tacherons l'aident pour écouler sa marchandise et a la fin de la journée, il les payent par rapport au revenus de leur vente.
