Jamal has owned a bakery for ten years. Jamal is a 43-year old man who lives in Bint Jbeil, Southern Lebanon with his wife and their three children. He does saj and mankoucheh. A saj is a metal oven where you make the saj bread. Saj is a traditional Lebanese cooking dome used to make markouk (flat round bread) and doughy confections or mankoucheh. A mankoucheh looks like a folded pizza. The most common toppings are zaatar (thyme), jebneh (cheese) and lahm bi ajin (minced meat). You can eat it any time of day but somehow it tastes better in the morning.
