Mouhamad

Mouhamad is a 19-year-old man who lives in Beirut, capital of Lebanon. Mouhamad has owned a bakery for two years. He uses a “saj” oven to make bread and “mankoucheh”. A “saj” is a metal oven, a traditional Lebanese cooking dome, used to make Markouk (“thinned”) bread and doughy confections or Mankoucheh. A mankoucheh looks like a folded pizza, most common toppings are zaatar (thyme), jebneh (cheese) and lahm bi ajin (minced meat). You can eat it anytime of the day, but somehow it tastes better in the morning.

Mouhamad requests a loan of $1,500 from Al Majmoua in order to purchase raw material for his bakery. This is the first time that Ali has requested a loan. Mouhamad is works hard to treat his clients well and to make good mankoucheh. His clients are his friends and neighbors. When he first started his business, he rented a bakery, but now he has his own. He developed this business because of his experience. In the future, he plans on expanding his business.
